Le lieu noir est captur\u00e9 dans les eaux froides de l'Atlantique Nord le long de la c\u00f4te de la Norv\u00e8ge. Le merlu frais est recouvert de gros sel afin d'eliminer l'eau du poisson et apr\u00e8s on le met dans les s\u00e9choirs m\u00e9caniques jusq'au moment ou on aura atteint le niveau de s\u00e9cheresse souhait\u00e9.<\/p>
